A Healthy Recipe from Tara’s Kitchen: Roasted Rainbow Brussels Sprouts

Posted on January 24, 2019 by Justin Serrano

Now that the weather is cold, I have been working out at the gym more. My favorite machine to use at the gym is the elliptical machine as it works out my whole body and feels like running to me. I also like that this exercise machine has a TV connected to it so I can watch the Cooking Channel as I get my workout in. I get so many great recipe ideas when I am exercising. One of the recipes that I tried was a healthy side dish.

This roasted vegetable dish was made with Brussels sprouts, butternut squash, and red onions so it was simply beautiful. I made the Roasted Rainbow Brussels Sprouts and it was so delicious. If you have never roasted veggies before, then you are in for a wonderful surprise. Roasting brings out a delicious taste to vegetables. It also has a wonderful sweet taste thanks to dried cranberries and a delicious balsamic glaze that is drizzled over the veggies.

Then God said, “I give you every seed-bearing plant on the face of the whole earth and every tree that has fruit with seed in it. They will be yours for food.” —Genesis 1:29, NIV
